Split a butternut squash (leave the seeds in for flavor), rub with your favorite oil and place face down on a cookie sheet in the oven at 400* until the skin starts to bubble. Remove seeds, lightly salt them and pop them back into the oven to toast. Cut squash into portions, serve squash with salt, pepper and seeds tossed on top…

or…make Butternut Squash Soup! Remove the skin and mash the squash. Blend with coconut milk, vegetable or chicken broth. Saute and mash carrots, onions and garlic. Blend them into the soup with cumin, salt and pepper to taste. Use a food processor or blender for the best consistency.
